Ribs have never been my favorite cut, in fact they are my least favorite, but the effort put into making them are well worth it. Slow cooking over charcoal, after marinating them in lemon juice, oregano, garlic and extra tallow for a day, after 2-3 hours the meat just falls off the bones. Or take a rack, drop a spicy rub, prep the smoker and in a few hours you have a feast for the family. I guess it must be the time waiting, as I have the same disdain for roasts, though always clean my plate.
