About Me

My passion for food began at age 8, learning to cook from my grandfather, a skilled butcher who passed down our family’s recipes.  By 11, I was volunteering at festivals like Folk Fest in Saskatoon, SK, and worked in restaurants from age 12 to 19, rising from dishwasher to sous chef.  I honed my craft across diverse cuisines Greek, Italian, Chinese, Irish, Mexican, French, and German, serving thousands at events like the German Pavilion.  A car accident forced me to step away from professional kitchens, but my love for high quality food never wavered.

 

Embracing the Carnivore Diet transformed my health after a personal scare, leading me to source the best meat possible.  I avoid grocery stores, knowing their practices firsthand, and instead partner with trusted ranchers and butchers.  Our current supplier, a microbiologist with a commitment to cleanliness, provides pasture raised, Grade AAA cattle from Fort Macleod, expertly dry aged for maximum flavor and nutrition.  We offer high fat cuts and grinds, packed with bioavailable nutrients, fat, collagen, marrow, and myoglobin, ensuring zero waste and unparalleled quality.  Bones are even boiled for their mineral rich broth.

Experience, and while going it alone is fun, it isn't always rewarding.  There are countless products out there to choose from, but without doing the research and understanding the marketing ploys abound in the market, one can be easily fooled and led astray.  With decades of experience in the food industry, and many years under my belt eating this way, I have found what works and what doesn't, and quality really matters.  Your body knows the difference, even though your mouth and eyes might disagree.  I have been to every butcher in Lethbridge and surrounding area, while many are quality merchants and know their craft, I was forced out of town to find the best product, but still close to home. 

I like to know specifically where my food comes from, how it was raise, what it was fed and how it was killed. I have witnessed a full breakdown several times, which were humanely dispatched, and didn't even know they left this plane.  Unfortunately there is far too much deception in the food industry, from chemicals being added to feed, to unneeded hormones and antibiotics all structured around profits over health, and we end up paying the price.  If you have had grocery store meat, it isn't horrible, but the flavor is lacking and its origin is unknown, even when they claim it is; our regulations are very loose and blurry on the subject.  This is why I partnered up with local ranchers, which also helps protect the supply chain in keeping things local.  


My journey didn’t stop at food.  Realizing the importance of what goes on my body, I began crafting tallow based soaps and skincare products using our abundant supply of beef fat. These high quality, nutrient rich products, including a versatile soap shampoo bar, have been a hit with customers.  We’re excited to expand with new varieties and scents soon.
