Has to be the most prized cut out of all, well not including the Porterhouse, but we will get to that another time... It is my favorite cut, without question. The best ratio for fat to meat, and I like to purposely coat the fat cap with the Kosher Real Salt, so that when it caramelizes on the grill and the flame chars it; it is just something you have to try for yourself, it tastes reminiscent of chocolate to me. Due to the fact that it is such a want by many, I don't get to partake that often, as I want my customers to have that experience, and when they are available; they go quick.
