Beef Liver

Did you know; 11 grams of Beef liver is the equivalent in nutritional density, as 434 grams of beef?  

The most nutritionally dense food on the planet, and the most reviled by almost every child in existence!  Who knew something tasting so horrid was so good for us?  Well childhood trauma aside, it doesn't actually taste that bad, especially when it is frozen fresh, cut into thin wedges perfect for select servings.  I will put the package in the fridge to thaw, and when the pieces loosen from each other I break off the ones I want and refreeze the remaining portion.  The fresher the liver, the less metallic it tastes, it also helps to marinate in milk or cream and season before cooking. 

I personally use 2 tablespoons of Tallow and equal parts butter, then submerge the pieces and cook 2 minutes a side.  It is a weekly meal to give a nutrient boost.
