Where are you located?

We used to have a location at 520 B 13th Street North for 10 years, but decided to move operations online to reduce costs, which enable us to maintain better pricing.

We have changed over to delivery only, and offer competitive rates, with orders over $150 receiving free delivery.

Where do you get your meat?

All of our meat is processed by Valley Custom Meats and is procured from ranchers within the Fort Macleod Area. All of our meat is free of Hormones, Antibiotics, Vaccines, Biovaer or Fortified feed additives, Pasture raised and finished with either grains or grass. Finally it is dry aged for a minimum of 14 days, for a unique umami taste.

What is Dry Aging?

Dry aging beef in a controlled environment (32-36F, 60-80% humidity, airflow) for 14-60 days tenderizes it through enzyme activity and concentrates flavors via moisture loss, yielding a rich, nutty, umami taste and tender texture.  Used for premium cuts like Ribeye, though we do the whole animal, as it's costly due to reduced yield from trimming.

Dry vs Wet Aging: Dry aging produces a deeper, more complex flavor and better tenderness than wet aging, where beef is vacuum sealed in its juices.  Wet Aging is cheaper, faster, and retains moisture but results in a milder, slightly metallic taste.  Dry aging excels for high-end dining; wet aging fits mass production.

Where do you deliver?

We deliver anywhere within the city of Lethbridge, Monday - Friday. We also deliver up to a maximum of 1 hour radius of Lethbridge, with a minimum order of $250. All out of town deliveries will occur on the Weekends.
